Recipe: Chocolate And Raspberry Fudge Cake

Calling all chocolate lovers...that’s everyone right? This delicious chocolatey cake is one to bring out for birthdays, special celebrations or just getting through the week! The raspberry element stops the cake from becoming too sickly sweet, whereas the chocolate fudge sauce gives it just the right amount of gooey consistency.

Preparation: 20 minutes

Cook: 35 minutes

Ingredients

For the sponge:

170g self-raising flour

1 teaspoon baking powder

175g soft butter

120g light brown soft sugar

3 large eggs

1 tbsp cocoa powder

For the chocolate fudge topping and filling:

100g light brown soft sugar

150g evaporated milk

90g dark chocolate broken into pieces

35g butter

2 drops vanilla essence

Bowl of raspberries

Equipment

1 X 20 cm cake tin

Whisk

Saucepan

Mixing bowl

Method

  1. Sieve the flour, cocoa powder and baking powder into a big mixing bowl.

  2. Beat all the other sponge ingredients together and spread the mixture evenly in one 20cm diameter cake tin, lined with baking parchment. Bake for 35 minutes in a preheated oven at 170℃.

3. For the fudge sauce, heat the evaporated milk and sugar in a pan until the sugar has dissolved and the mixture comes to the boil, keep simmering for a further 6 minutes without stirring. 

4. Remove the pan from the heat and whisk in the pieces of chocolate. Once melted add the butter and vanilla essence.

5. Once cooled, cover the sauce and place in the fridge for 2-3 hours in order for the mixture to thicken.

6. After the cake has finished baking allow it to cool before using a knife to slice it length-ways in two even parts. 

7. Slice enough raspberries to cover the bottom part of the cake and spread enough fudge sauce to the edges of the bottom half. Place the top half over it and cover the top in fudge sauce. Decorate the top with the rest of the raspberries and if you’re feeling really indulgent grate some white chocolate over the top too.

8. Enjoy the finished product with a cup of tea, followed by another slice and another...
