Staple to Scrumptious: Welsh Cakes

Love a good scone, but don’t want to spend the time making them? We’ve got the perfect recipe for you using some cupboard staples that are a hob alternative to the traditional oven-baked goods. Take a trip across the country to Wales and enjoy a traditional snack within minutes alongside your cuppa.

Makes: 15 (cookie cutter diameter dependant)

Prep Time: 10 minutes

Cooking Time: 2 - 3 minutes per side (or until golden brown)

Ingredients 

450g self-raising flour

225g sugar

170g margarine

130g currants

55g lard

3 medium eggs

Pinch of salt

Extra equipment

Frying pan

Cookie cutter

Rolling pin

Instructions

  1. Super simple – combine all ingredients in a large mixing bowl, forming a slightly sticky dough.

  2. Lightly flour your surface and roll out the dough to approximately 1 cm thickness.

  3. Cut to your heart’s content. Keep re-rolling the dough to max out the number of Welsh cakes you can make.

  4. Melt a little butter in the pan over a medium heat to prevent sticking. Cook for 2-3 minutes, gently lifting to look for the classic golden-brown colour. Once done, test out your flipping skills (fingers crossed they come out whole)!

  5. Repeat for the rest of your stash.

  6. Most importantly, sit back, relax with a cuppa and munch away!
