Recipe: Bara Brith (Tea Loaf)

Channel your inner Welsh-ness and try this fabulous tea loaf, perfect for an afternoon snack with your favourite hot beverage. Using a combination of cupboard staples, you can whip this cake up in no time and the best bit, you can reuse a tea bag to get that distinctive afternoon tea flavour!

Prep Time: 15 minutes

Cooking Time: 1 hour

EXTRA EQUIPMENT

Loaf tin

Baking paper

INGREDIENTS

225g self-raising flour

170g mixed fruit (NOTE: these should ideally be soaked overnight in cold tea)

85g soft brown sugar

30g margarine

1 egg

Pinch of salt

INSTRUCTIONS

1.       Soak the mixed fruit overnight in 1 cup of cold tea.

2.       Line a loaf tin with baking paper and preheat the oven to 180°C (gas mark 4).

3.       Mix the margarine and flour, before adding in the brown sugar.

4.       Beat the egg and add to the dry mixture.

5.       Pour in the mixed fruit and tea blend.

6.       Once all ingredients are combined, pour the mixture into the loaf tin and cook for 1 hour.

7.       Allow to cool and enjoy!
