Recipe: Spicy Tomato Pasta
Whether you have returned to the office or are in back-to-back Zoom meetings, sometimes all you need is a quick, simple, delicious meal to rustle up in the evening before you settle down for some well-earned relaxation.
This is my go-to pasta recipe for an easy dinner or lunch. I love to trim some baby leaves off my Greek basil plant just before serving – nothing beats seeing your home-grown herbs come together in a fab dish
Prep Time: 5 minutes
Cooking Time: 15 minutes
INGREDIENTS
1 white onion
1 garlic clove
1 tin of chopped tomatoes
1tbsp olive oil
1tsp chilli powder
1tsp ground cumin
Splash red wine vinegar
Basil leaves for garnish
Pasta of choice (fusilli works well)
INSTRUCTIONS
Begin cooking your pasta of choice in a saucepan whilst you prepare the sauce.
Finely chop the onion and garlic before frying them in the olive oil until softened.
Add the chilli powder and ground cumin, frying for a minute.
Carefully pour in the chopped tomatoes, mixing well.
Once warmed through, add in the red wine vinegar, burning off the alcohol and simmering for 5 minutes.
Serve the sauce on top of the cooked pasta, garnishing with basil leaves. Enjoy!
